2 cups whole or low fat milk
1 cup quinoa, rinsed
3 tbsp light brown sugar (I used splenda)
1/8 tsp cinnamon
1 cup blueberries
1. Bring milk to a boil in small saucepan, add quinoa and return to a boil. Reduce heat to low and simmer, covered until 3/4 of the milk has been absorbed, about 15 minutes.
2. Stir in sugar and cinnamon, cook covered until almost all the milk has been absorbed, about 8 minutes. Stir in blueberries, and cook cook for 30 seconds. Serve with additional milk, sugar, cinnamon & blueberries.

ReplyDeleteWas it Mom that told you about quinoa? She has been a huge fan of it lately! Hunter loves quinoa salad with lentils and diced tomatoe and cucumber and a vinegar dressing! She eats it everyday! I should try it as a breakfast cereal! Angie xo
ReplyDeleteYes Angie, it was your mom! haha. I was surprised how much I liked it. I also did it like a fried rice recipe and it was good! Hunters idea sounds great also.
