Snow Moon

The February 25th full Moon was called a Snow Moon.  I wish I could have gotten the picture as it was coming over the horizon but where I live that wasn't possible, so here she is:

 
Looks like an eye to me.

 
It was hard to get a shot, maybe because it was so bright, but I managed to get the camera to focus for a couple.

 
It was cold and clear.  Picture perfect.

 
It is cool how certain moons have certain names.  Like the Snow Moon, and we have the Harvest Moon, and so on.

Feb 18th Blizzard

This is the second weekend in a row that we have had to deal with blizzard conditions.  Looks like February is going to be the month for nasty weather.  This weekends blizzard was worse for us up on a mountain, everything turned to ice, which made for a nasty mixture.  We lost power for around 9 to 10 hours.  I got a few pictures.

Every tree was layered with ice.
 
 
Something so pretty can cause a lot of damage.
 
 
I am tired of the cold, really.
 
 
The weight of the ice caused trees to lay in the road.
 
 
A little video of the wind.
 
 
On a better note, I found these in my garden before the storm.  My early tulips.  Spring is just around the corner.
 
 
No fun going without power but it was very pretty.

Well I thought this was nice.  I like writing poems.  I have only wrote a few but they come from a deep feeling place and they only come to me once in a while.  So it was nice to  have them say this about me, whether it is true or they just want more poems, I don't know, but it is fun, lol.

There is a family photo on the table,
bringing back such fond memories.
If I could talk to that photo on the table,
it would bring you all a little closer to thee.
How I wish I could turn back the pages,
and have those moments to share once more.
I would look at that photo on the table,
and know that life has so much more.
So I know I can't change that picture,
the memories will stay precious to me,
every time I see that picture on the table,
I will smile and know you are still with me.

Banana Treat

Not sure what this one is called, I got it off of pinterest and decided to try it, just to see if it is like they said.  So first you take 4 bananas, not to over ripe.  An excellent way to use up bananas.  You put these in the freezer for 1 hr or more until they are froze solid, mine took more then an hour. 

 
Put them in a food processor, this will take a little time but not long.  You do it on the pulse setting, it will start turning creamy.  Scrape down the sides quite a bit.
 
 
It will soon look like this.
 
 
At this point add an add in.  I chose 2 tbsp. peanut butter and 2 tsp cocoa (they say dutch, I didn't have that).  Blend.
 
 
Now it looks like this, I have to hurry, the power just flickered, lol.
 
 
Well at first it tasted a little bitter, from the chocolate, but the more I ate the more I liked.  Either eat soft serve or freeze to eat as you like.  Enjoy, it is a pass
 
 
 



Layered Mac & Cheese/Beef

I am always relied on Betty Crocker recipes that turn out the way I like them, so I found this one this week of all places Facebook.  Yeah I like facebook.  Anyway here goes:


2 cups macroni
1 lb lean hamburger
1 tsp salt
1/8 tsp pepper
2 tbsp. butter or marg
2 tbsp. flour
2 cups milk
1/2 cup chicken broth
3 cups shredded cheddar
1 cup soft bread crumbs
 
Oven 350 degrees.  Spray casserole dish.  Cook & drain macroni.  Meanwhile in a skillet cook beef, 1/2 tsp salt & pepper over med-high 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked, drain. (I just cooked until it was done).
 
In a saucepan melt margarine over med heat, stir in flour, cook 1 minute, stirring constantly, until bubbly.  Stir in milk, cook 5 to 6 minutes until mixture thickens slightly.  (mine took a little longer then 6)  Stir in broth and remaining 1/2 tsp salt.  Remove from heat, stir in cheese, fold in macroni.
 
Spoon 1/3 of macroni mixture (about 1 1/3 cups) into casserole, top with half of the beef (about 1 1/2 cups), layer with another 1/3 macroni mixture, remaining beef and remaining macroni.  Top with bread crumbs.  Bake uncovered 25 to 30 minutes or until bread crumbs are golden.  Makes 6 servings.
 

This is after the macroni is cooked and the cheese sauce is made, adding the two together.

First layer, is the macroni and cheese sauce, I sprayed the casserole dish with non stick spray.

Next, layer hamburger on top of macroni, I may have put a little too much on this layer, but who's measuring.


Next another layer of macroni.
 
 
As you can see I should have divided the hamburger more evenly.
 
 
Bread crumbs on top, and in the oven it goes.
 
 
Here is what it looks like going in.
 
 
I chose 30 minutes
 
 
And it's done, looks like this is what is for supper tonight.
 
 
No strong overpowering taste, with simple garlic toast and some calcium, a pass.
 
 
 
 
 



Blizzard Nemo

While Nova Scotia is being hit today by a Nor Easter called Blizzard Nemo.  Why they gave it a name I do not know.  The winds are steady which is causing blowing, drifting snow.  So there is nothing one can do but stay inside and wait for it to pass.  Unless you are like my husband and has to go to work in the middle of it to help his fellow workers.  So I have a chili in the slow cooker and watching a Gillmore Girls marathon on dvd, and blogging.  Not so bad, but if the power goes, it will be bad, very bad, lol.

Some of the snow was already there, but the rest blew in overnight and today, slow moving, hasn't let up all day.

The video shows a little more as you can hear the winds strongly blowing which if you live on a mountain, makes it a little tricky to get up or down.

 
This is at 3 pm, one drift in my driveway, 18 inches! unreal.
 
 
Got to love blizzards!  We are on the coast, so when something comes up the Eastern Seaboard, we usually get it also.
 
 
This is the after effect of the blizzard, it was quite steady and windy!
