Ranch Potatoes

I have to give this idea's credit to my husband.  I told him to check out my new addiction (Pinterest), to see what it was about.  So he was surfing and came across this recipe, says we need to try this.  So I went yesterday and got what I needed and I have to say, it is now one of our favorites!  Yeah, yeah, thanks hubby!  So here goes:

I am into simple cooking, with simple ingredients.  So this was a hit.  What you need is:
8 - 10 medium potatoes (cut into 1/2" cubes) I used 10
1 can cream of mushroom soup (undiluted)
1 1/2 cups milk
1 envelope ranch dressing mix
2 cups shredded cheddar cheese  (divided)
s & p
6 bacon slices (cooked until crispy and crumbled)  I used the oven method.

1. Cut your potatoes to the 1/2" cubes.  Cover with water and cook 10 -12 minutes.  Drain.
2. Pre-heat oven to 350 degrees.  Lightly grease a 13 x 9  inch casserole dish.  In a bowl mix together cream of mushroom soup, milk, ranch dressing, 1 cup of the cheese, salt & pepper.  Pour over potatoes in the casserole dish.
3. Sprinkle remaining cup of shredded cheddar cheese and the crumbled bacon over the top.  Place into the oven and bake uncovered for 25 - 30 minutes or until potatoes are tender.


Simply mix the ingredients together.

This is the ranch mix I picked up.

10 potatoes sounds like a lot but it gives you a good healthy portion.

Oh it smells soo good.

I was worried there wasnt enough sauce, but it was perfect.

More cheese,  you could probably modify you ingredients to take out some of the fat.

Ready for the oven.

I didn't add extra meat for a side, I felt this was plenty.  I put more vegs on my plate to start.  And a slice of garlic toast to go with it, well now that's supper!
