Homemade Scallop Potatoes

Well my last thing for the day before I go to my grandsons Christmas concert is to make a homemade scallop potato.  So I thought I would share, and with citrus dill haddock and farmers carrots on the side.  I got my potatoes from a local farmer, and they can't be beat for flavour.  So here goes.

Okay, first get 6 medium potatoes, and grease your casserole dish.

Planning ahead and having everything ready is a good thing.  I dice the potatoes and set them aside in cold water.

Very simple ingredients,  In dish add 3 Tbsp flour, 1 tsp salt, 1/4 tsp pepper.

1/4 cup onion, I love this little black & decker chopper my son gave me for little jobs.

Heat 3 Tbsp margarine, I used Becel salt free.

Over medium heat, add onion and cook 2 minutes.

After 2 minutes add the flour mixture and quickly stir in.

Looks like this.

Take off burner, add 2 1/2 cups milk, stir in and place back on burner and stir constantly until it comes to a boil, still on meduim heat.  This step takes time but thickens as it is cooking.  When it comes to a boil, boil and stir for 1 minute.

Take your milk off of burner, drain your potatoes and put in casserole.

Pour milk mixture over top, make sure it covers the potatoes.

Cook covered 350 degrees for 30 minutes, then remove cover and continue to cook for 60 to 70 minutes until done.

Next I decided to try this, I got it free with my fish purchase.  I didn't make the rice only wanted the seasoning.

Just press your fish in the crumbs and transfer to foil lined pre-sprayed pan.

Cook 350 degrees for 8 to 15 minutes.  I cook mine the longest time.

Dinner is served, how satisfying.  Happy cooking everyone.

And More

Boy I even have time for some blogging while home, I think I could like this!  Next I went downstairs and dug through my totes to see what else I could do.  So here goes.

First I had my grandson up last week for a sleepover and he loved the tree.

I took out the regular bulb and replaced it with a red one.


I had some stockings, so I added them to my ladder.

Then I found one of my favorite things.  A craft we did at one of the cookie partys.  My memories.This is our first Christmas 1981

I can look and remember my children growing up.

Oh where have the years gone.

They look so tired and happy at the same time.

More Decorating

I had to opportunity to be home today, which is quite the treat so I looked around to see if something else needed some tweaking.  So first I looked at my lights on top of my cabinets and thought they needed something, where I am going bow crazy, I decided to do some for the top.

I am glad there was so much ribbon on this roll!

My own little creation, so simple, that's why I like it, because I can do it.

Just fold 3 times.


I just wrap the ribbon twice to hold.

Cut and done!

It looked so plain

And bam, some color.

Now add a little sign, and you have something finished.

My Dukan Progress Report

Well I am almost halfway through the first 50 days of my consolidation phase of the diet and surprisingly doing just fine so far.  Have lost a total of 23 lbs.  We can add one celebration meal a week, the bread, fruit, one day of starches like potato or pasta, cheese.  But with adding things I have only had one celebration meal so far which was eating out in the City when we were there on the weekend.  I say feeling guilty when eating but I had so much appreciation for the meal.  The only down side I am having is I am flaring again due to colitis complications ever since I added bread.  So I will look for an edible gluten free bread where I am suspecting a gluten problem, but that doesn't have anything to do with the diet, it has to do with me.  But if not on the plan I wouldn't have noticed that when I eat bread I have major problems, because I was eating whatever came my way.  So I am back on meds for that, but hey I had 3 glorious months free and I will take that.  So now to keep on keeping on as they say and hope for the best.  As of Dec 28 I will have my first 50 days consolidation in and can start to increase more!  Got to like that.  And I plan on having a good piece of my homemade cheesecake over the holidays.  Now that my clothes are getting too big and I had to search out the smallest pants in my closet, my daughter tells me I look like I have a child butt and need new clothes, haha, gotta love it!  Anyway looking forward to the holidays, trying to stay positive and even though colitis steals your energy because it steals you iron, I will make it through and have a big smile the whole time.  Have a great day everyone!
